
Dal Pakwan
Crispy fried flatbread with chana dal curry. Dewas Sindhi community Sunday brunch staple.

- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)

- All-purpose Flour — 200 g (ground)
- Chana Dal — 100 g (whole)
- Toor Dal — 250 g (whole)
Tempering
Method
- Wash and soak the toor dal and chana dal together for 30 minutes, then pressure cook with turmeric powder, salt and enough water for 3 to 4 whistles till soft.
- Lightly mash the cooked dal with a spoon and keep it warm, adjusting the consistency with a little hot water if needed.
- For the pakwan, knead the maida with a little salt and oil into a stiff dough using water, and rest it for 15 minutes.
- Divide the dough into small balls and roll each into a thin round, then prick all over with a fork so it does not puff up while frying.
- Heat oil in a kadai and deep fry the maida rounds on medium heat, turning occasionally, till they turn golden and crisp on both sides.
- Drain the fried pakwan on paper to remove excess oil and let them cool slightly so they stay crisp.
- Garnish the warm toor dal with chopped coriander leaves.
- Serve the crisp pakwan alongside the warm dal for the classic dal pakwan breakfast.
