
Aam Ras Puri
Deep-fried wheat puris served with chilled sweetened mango pulp (aam ras) -- a classic MP Gujarati community summer festival meal.

- mango pulp — 450 g
- salt (optional) (whole)
- sugar — 45 g (whole)
- Wheat Flour (Atta) — 250 g (ground)
Tempering
Method
- Pour the oil into a deep kadhai and set it to heat on medium flame while you prepare the dough.
- Knead the Wheat Flour with salt and about 120 ml water into a stiff, smooth dough, then rest it 15 minutes under a damp cloth.
- Divide the dough into 12 balls and roll each into a thin 10 cm disc.
- Slide the discs into the hot oil, press gently with a slotted spoon until they puff, and fry 40-50 seconds a side until pale golden. Drain on paper.
- Whisk the mango pulp with the sugar until smooth and fully dissolved to make the aam ras.
- Chill the aam ras for at least 15 minutes.
- Serve the hot puris alongside the chilled aam ras.
