- Gram Flour — 1 tsp (ground)

- Turmeric Powder — 0.5 tsp (ground)
- coriander powder — 1 tsp (ground)
- Amchur (Whole Dried Green Mango Slices) — 1 tsp (whole)
- singhade — 300 g (chopped)
- green chillies — 1 piece (chopped)
- Tomato — 1 piece (chopped)
Tempering
- Mustard Seeds (Black) — 1 tsp (whole)
- Cumin Seeds — 1 tsp (whole)
Method
- Pressure cook the singhare (water chestnuts) with their skin and about 1 cup water for 4 whistles, then peel and chop into small pieces.
- In a bowl whisk the curd with gram flour, turmeric powder, coriander powder, black pepper powder, amchur and salt into a smooth mixture.
- Heat oil in a kadai and add mustard seeds and cumin seeds, letting them crackle.
- Add the chopped green chilli and tomato and saute till the tomato turns soft.
- Add the chopped water chestnuts and mix well for a couple of minutes.
- Lower the heat, pour in the curd-gram flour mixture and stir continuously, adding a little water to adjust consistency.
- Simmer for 4-5 minutes till the gravy thickens and check the seasoning.
- Garnish with chopped coriander leaves and serve hot.
