  1. Pressure cook the singhare (water chestnuts) with their skin and about 1 cup water for 4 whistles, then peel and chop into small pieces.
  2. In a bowl whisk the curd with gram flour, turmeric powder, coriander powder, black pepper powder, amchur and salt into a smooth mixture.
  3. Heat oil in a kadai and add mustard seeds and cumin seeds, letting them crackle.
  4. Add the chopped green chilli and tomato and saute till the tomato turns soft.
  5. Add the chopped water chestnuts and mix well for a couple of minutes.
  6. Lower the heat, pour in the curd-gram flour mixture and stir continuously, adding a little water to adjust consistency.
  7. Simmer for 4-5 minutes till the gravy thickens and check the seasoning.
  8. Garnish with chopped coriander leaves and serve hot.
