Dahi Suran Sabzi (North Indian Yogurt Yam Curry)

Dahi Suran Sabzi is a tangy North Indian (UP/Bihar) curry where boiled elephant foot yam (suran/jimikand/oal) chunks are simmered in a yogurt-based gravy seasoned with amchur, garam masala, coriander powder, turmeric, cumin seeds, and red chili powder. The cooling curd balances the warming spices and the earthy yam. Festival/vrat-acceptable without onion-garlic — served with phulka roti, jeera rice, or paratha.

Ise dahi suran, zimikand dahi naam se bhi khoja jata hai.
