Method

  1. Wash the rice well and boil it in plenty of water till fully soft and slightly overcooked.
  2. Drain the rice and let it cool down completely, then transfer to a large bowl.
  3. Add the curd and enough water to the cooled rice to get a thin, liquid consistency. Mix in salt and stir well.
  4. Heat mustard oil in a small tempering pan.
  5. Add cumin seeds to the hot oil and let them splutter and turn fragrant.
  6. Pour the hot tempering over the rice and curd mixture and mix gently.
  7. Garnish with chopped coriander leaves and let the pakhala rest for a while before serving, ideally chilled or at room temperature.
