  1. Wash the mutton pieces well and pat dry. Wash and soak the basmati rice in water for 20 minutes, then drain.
  2. Grate the coconut and grind it to a smooth paste with a little water.
  3. Heat the coconut oil in a heavy pot or donne (leaf cup) style handi.
  4. Add the mutton pieces along with the ground coconut paste, coriander powder, red chilli powder, turmeric powder and salt. Mix well so the mutton is fully coated with the masala.
  5. Cook on medium heat, stirring occasionally, until the mutton releases its juices and the masala turns fragrant, about 10 to 12 minutes.
  6. Add enough water to just cover the mutton, cover the pot and simmer on low heat until the mutton turns tender, about 20 to 25 minutes.
  7. Add the soaked and drained basmati rice on top of the mutton gravy, add enough hot water for the rice to cook, cover tightly and simmer on very low heat until the rice is fully cooked and the water is absorbed, about 15 to 18 minutes.
  8. Gently fluff the biryani with a fork, taking care not to mash the mutton pieces.
  9. Garnish with chopped coriander leaves and serve hot, traditionally in a donne leaf cup.
