Method

  1. Wash the rice and soak it for 20 minutes, then drain.
  2. Clean the mutton pieces and marinate with turmeric powder, red chilli powder, coriander powder and salt for at least 20 minutes.
  3. Heat coconut oil in a heavy-bottomed pot and add the marinated mutton. Sear on high heat for a few minutes till the pieces change colour.
  4. Add a little water, cover and cook the mutton on low flame till it turns tender, stirring occasionally and adding water as needed.
  5. Once the mutton is nearly cooked and the masala thickens around it, add the soaked and drained rice and mix gently to coat with the mutton masala.
  6. Add hot water in the right ratio for the rice, cover the pot tightly and cook on low flame till the rice is done and the water is absorbed.
  7. Let it rest covered for 5 minutes so the rice and mutton flavours settle without becoming mushy.
  8. Garnish with chopped coriander leaves and serve hot in the traditional donne leaf cup style with raita.
