Method

  1. Peel the raw jackfruit, remove the core and seeds, and chop the flesh into small pieces. Grate or grind the jackfruit pieces coarsely.
  2. Heat half the ghee in a heavy-bottomed pan and add the grated jackfruit along with a pinch of salt.
  3. Cook the jackfruit on low to medium heat, stirring often, until it softens and turns tender, about 20 to 25 minutes.
  4. Add the sugar and mix well, then continue cooking on low heat, stirring frequently so it does not stick to the bottom, until the sugar melts and the mixture starts to thicken.
  5. Keep cooking slowly, adding the remaining ghee a little at a time, until the mixture turns glossy, darkens slightly and starts leaving the sides of the pan, about 60 to 70 minutes in all.
  6. Once the halwa thickens to a soft, jammy consistency and the raw jackfruit smell is gone, switch off the heat.
  7. Add the crushed cardamom and mix well.
  8. Serve warm or at room temperature as a traditional coastal Karnataka sweet.
