
Chicken Sukka

- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main

- chicken — 500 g (chopped)
Tempering
- oil — 2 tbsp (whole)
- Cumin Seeds — 1 tsp (whole)
Method
- Cut the chicken into medium pieces, wash, and pat dry.
- Heat the oil in a heavy-bottomed kadhai over medium flame.
- Add the Cumin Seeds and let them sizzle for a few seconds until fragrant.
- Add the chicken pieces and sear on high flame for 4-5 minutes, turning occasionally, until lightly browned.
- Lower the flame, season with salt, cover, and cook for 12-15 minutes, stirring occasionally, until the chicken releases its juices.
- Uncover and cook on medium-high flame for a further 5-6 minutes, stirring frequently, until the moisture dries up and the chicken turns dry and roasted.
- Adjust the salt, garnish generously with Coriander Leaves if using, and serve hot.
