
Chhattisgarhi Navratri Kuttu Puri
Chhattisgarh's Navratri fasting classic: buckwheat flour kneaded with mashed potato into a stiff dough, rolled into rounds and deep-fried until they balloon into crisp, golden puris.

- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)

- Potato — 100 g (chopped)
- Kuttu Atta (Buckwheat Flour) — 250 g
Tempering
Method
- Boil the Potato until a skewer slides through with no resistance, then peel it while still warm and mash it completely smooth.
- Rub the mashed Potato into the Kuttu Atta (Buckwheat Flour) with salt, working it through with your fingertips until the mixture looks like damp crumbs.
- Knead to a stiff, smooth dough, adding water only a few drops at a time. Buckwheat dough is fragile and a wet dough will tear when rolled.
- Rest the dough covered for 10 minutes, then divide it into small balls and roll each into a thick round.
- Heat the oil in a deep kadhai until a scrap of dough dropped in surfaces briskly without browning immediately.
- Slide in one puri at a time and press it gently under the oil with a slotted spoon until it balloons, then turn it and fry until both faces are pale gold.
- Drain on paper, scatter Coriander Leaves over and serve hot.
