Tempering
Method
- Wash the rice and soak it for 20-30 minutes, then drain and cook it in water till soft and slightly mushy.
- Mash the cooked rice well while it is still warm.
- In a bowl, mix the rice flour with the mashed rice, a little salt and a few drops of oil. Add warm water gradually and knead into a smooth, soft dough.
- Divide the dough into equal portions and pat or roll each one into a small thick roti on a greased surface, since this dough does not roll easily like wheat dough.
- Heat a tawa and roast each roti on both sides with a little oil, pressing gently, till golden brown spots appear and it is cooked through.
- Traditionally this roti is finished by placing it directly on hot embers or a low open flame for a few seconds on each side to get its signature smoky char.
- Garnish with chopped coriander leaves and serve hot with chutney or sabzi.
