
Carrot Coriander Pakora (Fritters)
North Indian monsoon snack — grated carrots and chopped coriander in spiced gram flour batter, deep-fried as golden fritters. Crispy outside, soft inside. Pairs with green chutney and masala chai.

Ingredients
- Gram Flour — 3 tbsp (ground)
- green chillies — 1 piece (chopped)
- Carrot — 4 piece (grated)
- salt (optional) (whole)
- Sunflower Oil (optional) (whole)
- Coriander Leaves — 0.5 cup (chopped)
Method
- To begin making Carrot and Coriander Fritters, grate the carrots and place them in a mixing bowl.
- Add the chopped coriander leaves, chopped green chilli, gram flour and salt to the grated carrots and mix well, adding a splash of water only if needed to bring it together into a thick batter.
- Heat oil in a shallow pan or tawa over medium heat.
- Take small portions of the batter and shape them into flat fritters, then place them carefully into the hot oil.
- Pour a little oil over the sides and let the fritters cook for about 2 minutes until the bottom turns golden and crisp.
- Flip the fritters over and cook the other side for another 2 minutes until golden and cooked through.
- Remove the fritters onto a plate lined with paper towel and repeat with the remaining batter.
- Serve the Carrot and Coriander Fritters hot with Dhaniya Pudina Chutney for your tea time snack.
