  1. Wash the moong dal well and soak it in water for 4 to 5 hours, then drain completely and pat it dry on a clean cloth.
  2. Spread the soaked dal out and let it air dry for a while so excess moisture is removed before frying, which keeps it crisp.
  3. Heat oil in a kadai on medium flame for deep frying.
  4. Add the moong dal in small batches and fry on low to medium flame, stirring often, till the dal turns golden and crisp all over.
  5. Remove the fried dal with a slotted spoon and drain on absorbent paper to remove excess oil.
  6. While still warm, sprinkle salt evenly over the fried dal and toss well so it coats every piece.
  7. Let the namkeen cool completely to room temperature so it turns fully crunchy.
  8. Garnish with chopped coriander leaves and serve the moong dal namkeen as a crispy snack, storing the rest in an airtight container.
