
Bikaner Moong Dal Namkeen

Tempering
Method
- Wash the moong dal well and soak it in water for 4 to 5 hours, then drain completely and pat it dry on a clean cloth.
- Spread the soaked dal out and let it air dry for a while so excess moisture is removed before frying, which keeps it crisp.
- Heat oil in a kadai on medium flame for deep frying.
- Add the moong dal in small batches and fry on low to medium flame, stirring often, till the dal turns golden and crisp all over.
- Remove the fried dal with a slotted spoon and drain on absorbent paper to remove excess oil.
- While still warm, sprinkle salt evenly over the fried dal and toss well so it coats every piece.
- Let the namkeen cool completely to room temperature so it turns fully crunchy.
- Garnish with chopped coriander leaves and serve the moong dal namkeen as a crispy snack, storing the rest in an airtight container.
