Ingredients
Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- onion — 100 g (chopped)
- salt (optional) (whole)
- Red Chilli Powder (Lal Mirch) — 1 tsp (ground)
- coriander powder — 1 tsp (ground)
- Turmeric Powder — 0.5 tsp (ground)
- Potato — 250 g (chopped)
Tempering
- Mustard Oil — 2 tsp (whole)
- oil — 2 tbsp (whole)
Method
- Boil the potatoes in water until soft and fork-tender, then peel and mash them roughly with your hands or a masher, leaving some texture.
- Finely chop the onion and coriander leaves and keep aside.
- Heat the oil and mustard oil together in a small pan until the mustard oil loses its raw smell.
- Add the chopped onion to the hot oil and let it stay raw and crunchy, or saute lightly for a few seconds if you prefer it slightly softened, this is usually served with raw sharp onion for the classic chokha taste.
- In a mixing bowl, add the mashed potatoes, turmeric powder, red chilli powder, coriander powder and salt.
- Pour the hot oil with the chopped onion over the mashed potato mixture and mix everything well by hand, mashing further as you combine so the spices coat evenly.
- Check the seasoning and adjust salt and chilli as needed.
- Garnish with the chopped coriander leaves and serve the chokha at room temperature with rice or roti.
