Maharashtrian and Gujarati snack, also called Patra or Pathrode, of colocasia (arbi/taro) leaves smeared with a sweet-tangy gram flour, tamarind and jaggery paste, rolled, steamed, then sliced and tempered with mustard, sesame and curry leaves.

  1. Prepare the filling/mixture for Aluvadi. Chop or mash ingredients as needed.
  2. Mix with spices, salt, and binding agent (besan/flour). Shape into desired form.
  3. Heat oil in a deep kadhai on medium flame.
  4. Fry in batches until golden brown and crispy. Drain on paper towels.
  5. Serve hot with chutney.
