Used as the masala base for stuffing mango, lemon, mixed-veg and other achaars. Stored airtight; used by the spoonful to make any pickle.

- Peanut Oil — 2 tbsp (whole)
- Turmeric Powder — 0.5 cup (ground)
- Fennel Seeds — 1 tbsp (whole)
- salt — 2 cup (whole)
- Kashmiri Mirch (Premium Silk Grade Powder) — 250 g (ground)
- methi powder — 2 tbsp (ground)
Tempering
- Mustard Seeds (Black) — 200 g (whole)
- Asafoetida — 2 tbsp (ground)
Method
- To prepare Maharashtrian Achar Ka Masala recipe, Heat oil in a kadai over medium heat.
- Add hing, fenugreek powder and saute it for a few seconds until aroma rises.Add chilli powder , mustard, dal, fennel seeds, turmeric (except salt) and mix well.
- Turn off the heat.Now add salt and mix well.Let the Maharashtrian Achar Ka Masala cool down to room temperature.Keep it in airtight bottles until required for Spicy Lime Pickle, Aam ka Achar, or in dishes like Achari paneer.
