
Wedding Payasam
Semolina and milk kheer with cardamom, cashews, and raisins. Classic AP wedding dessert.

Ingredients
Garnish
- Cashew Nuts (optional) (garnish) — 15 g (whole)
- Cardamom — 2 piece (ground)
- raisins (optional) (garnish) — 12 g (whole)

- sooji — 60 g (roasted)
- sugar — 0.5 cup (whole)
- Milk — 100 g (whole)
- salt (optional) (whole)
Tempering
Method
- Heat the ghee in a heavy-bottomed pan and roast the semolina on low flame for 3-4 minutes till it turns light golden and gives off a nice aroma.
- In the same pan, lightly roast the cashew nuts and raisins in the leftover ghee till the cashews turn golden and raisins puff up. Keep them aside for garnish.
- Bring the milk to a boil in a separate pan along with a pinch of salt.
- Slowly pour the boiling milk into the roasted semolina, stirring continuously to avoid lumps.
- Add the sugar and simmer on low flame, stirring often, till the semolina cooks through and the payasam thickens to a smooth, pourable consistency.
- Crush the cardamom lightly and stir it in for flavour.
- Simmer for another 2-3 minutes till everything comes together nicely.
- Garnish with the roasted cashew nuts and raisins and serve the payasam warm or chilled.
