  1. Heat the ghee in a heavy-bottomed pan and roast the semolina on low flame for 3-4 minutes till it turns light golden and gives off a nice aroma.
  2. In the same pan, lightly roast the cashew nuts and raisins in the leftover ghee till the cashews turn golden and raisins puff up. Keep them aside for garnish.
  3. Bring the milk to a boil in a separate pan along with a pinch of salt.
  4. Slowly pour the boiling milk into the roasted semolina, stirring continuously to avoid lumps.
  5. Add the sugar and simmer on low flame, stirring often, till the semolina cooks through and the payasam thickens to a smooth, pourable consistency.
  6. Crush the cardamom lightly and stir it in for flavour.
  7. Simmer for another 2-3 minutes till everything comes together nicely.
  8. Garnish with the roasted cashew nuts and raisins and serve the payasam warm or chilled.
