- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Nagaland Smoked Pork (Traditional Fire-Dried) — 100 g (chopped)
- green chillies — 2 tsp (chopped)
- Turmeric Powder — 0.5 tsp (ground)
- salt (optional) (whole)
- Red Chilli Powder (Lal Mirch) — 1 tsp (ground)
- Garlic — 2 tsp (chopped)
Tempering
Method
- Rinse the smoked (dehydrated) pork, then boil it in water for 15-20 minutes until it softens. Drain and cut into bite-size pieces.
- Heat a little oil in a kadhai or heavy pan.
- Add the chopped garlic and saute until fragrant.
- Add the boiled smoked pork pieces and stir-fry on medium-high flame so the edges brown.
- Add chopped green chillies and a pinch of turmeric. Toss well to coat the pork.
- Add red chilli powder and salt to taste. Mix well.
- Keep dry-frying on medium-low flame, stirring often, until the pork is tender and the dish is dry.
- Taste and adjust salt and chilli.
- Garnish with fresh coriander leaves and serve hot with rice.
