Ayala Fish Fry is a classic Kerala-Tamil mackerel preparation — whole or filleted ayala/mackerel marinated in red chilli powder, black pepper, ginger-garlic paste, lemon juice, fennel powder, and turmeric, then shallow-fried on tawa with coconut oil till deeply crisp on the outside. A coastal South Indian staple served with steamed rice, sambar, or as a fish-fry-meal accompaniment.

  1. To begin making the Ayala Fish Fry Recipe, wash and clean fish well.
  2. Score the fish on it’s skin on both sides.In a bowl squeeze lime juice.
  3. Add red chilli powder, turmeric powder, fennel powder, black pepper powder, ginger-garlic paste, salt and mix well.
  4. Make a thick paste.Rub the spice paste all over the fish including the slit areas on both the sides.Cover and let the fish marinate in the fridge for 15 minutes.Heat few tablespoons oil in a pan.
  5. Shallow fry the whole fish on medium flame until golden brown on both sides.Serve hot with lime wedges and onion carrot slices if preferred.Serve Ayala Fish Fry with Mixed Vegetable Sambar, Steamed Rice and Elai Vadam for a weekday lunch or dinner.
