Method

  1. Heat the Coconut Oil in a wide pan or wok until it shimmers, then set it aside off the heat while the Beef cooks.
  2. Pressure-cook the Beef with Turmeric, black pepper powder, coriander powder, salt and 100 ml water for 5 whistles, about 20 minutes, then let the steam settle.
  3. Bring the Coconut Oil back to medium flame, add the sliced Shallots with the Green Chilli and fry 4-5 minutes until light brown.
  4. Add the crushed Ginger and Garlic, fry 2 minutes, then the sliced Coconut and Curry Leaves and fry 2 minutes more until the Coconut turns golden.
  5. Tip in the cooked Beef with any leftover liquid and roast 7-8 minutes on high, scraping the base, until dark and dry.
  6. Sprinkle the garam masala powder and fennel powder and toss for a minute off the heat.
  7. Garnish with Coriander Leaves and serve hot.
