A traditional Tripuri dish of bamboo shoots simmered with berma (dried fermented fish), garlic and green chilli. Cooked with very little oil in true Mui Borok style.

Method

  1. Rinse the berma (dried fermented fish). Clean and chop the bamboo shoots; chop the garlic and green chillies.
  2. Heat a little oil in a pan and lightly fry the garlic and green chillies.
  3. Add the bamboo shoots and the berma, with a little water and a pinch of turmeric and salt.
  4. Cover and simmer on low flame until the bamboo shoots are soft and the berma flavour blends in.
  5. Adjust salt and chilli. Garnish with fresh coriander leaves and serve hot with rice.
