
Bai Muitru
A traditional Tripuri dish of bamboo shoots simmered with berma (dried fermented fish), garlic and green chilli. Cooked with very little oil in true Mui Borok style.

- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Berma (Tripura Dried Fermented Fish) — 40 g (chopped)
- green chillies — 2 tsp (chopped)
- salt (optional) (whole)
- Bamboo Shoots — 120 g (chopped)
- Garlic — 2 tsp (chopped)
Tempering
Method
- Rinse the berma (dried fermented fish). Clean and chop the bamboo shoots; chop the garlic and green chillies.
- Heat a little oil in a pan and lightly fry the garlic and green chillies.
- Add the bamboo shoots and the berma, with a little water and a pinch of turmeric and salt.
- Cover and simmer on low flame until the bamboo shoots are soft and the berma flavour blends in.
- Adjust salt and chilli. Garnish with fresh coriander leaves and serve hot with rice.
