
Thukpa Arunachali
Thukpa is a warming Tibetan-origin noodle soup popular in Tawang and West Kameng in Arunachal Pradesh. Wheat noodles are simmered in a spiced mutton broth with cumin and finished with fresh coriander, making a complete one-bowl meal for cold weather.

Ingredients
Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- wheat noodles — 250 g (whole)
- salt (optional) (whole)
- Mutton — 500 g (chopped)
Tempering
- oil — 2 tbsp (whole)
- Cumin Seeds — 1 tsp (whole)
Method
- Wash the mutton. Heat oil in a pot, add cumin seeds and let them splutter.
- Add the mutton and saute on high heat until lightly browned and sealed.
- Pour in plenty of water, season with salt, cover and simmer until the mutton is tender and a flavourful broth forms.
- Meanwhile boil the wheat noodles separately until just done, drain and set aside.
- Divide the noodles into bowls, ladle the hot mutton broth over them, garnish with fresh coriander and serve piping hot.
