Method

  1. Grind the fresh coconut and cardamom in a mixer with a little water, and extract the coconut milk from the pulp using a strainer or muslin cloth.
  2. Peel and grate or finely chop the sweet potato.
  3. Heat the milk in a heavy-bottomed pan, add the grated sweet potato and cook on low to medium heat, stirring often, until the sweet potato turns soft.
  4. Add the extracted coconut milk and sugar, and mix well, letting the mixture simmer and thicken.
  5. Sprinkle in the sooji (semolina) gradually while stirring continuously to avoid lumps, and cook until the semolina is done and the kheer thickens.
  6. Switch off the heat, garnish with chopped cashew nuts and a few strands of saffron, and serve the Sweet Potato Kheer warm or chilled.
