
Spicy Soya Bhurji North Indian Soya Matar Bhurji
Spicy Soya Matar Bhurji is a protein-rich North Indian scramble made by soaking soya chunks, grinding them coarse and stir-frying them with onion, tomato, ginger, garlic and green peas. Coriander, chana masala, red chilli, garam masala and turmeric give it a bold, semi-dry masala coating, finished with fresh coriander leaves. It is served hot with roti or paratha for a wholesome vegan lunch or dinner.

Ingredients
- Coriander Leaves — 0.25 cup (chopped)
- Red Chilli Powder (Lal Mirch) — 1 tsp (ground)
- Sunflower Oil — 1 tsp (whole)
- garam masala powder — 0.5 tsp (ground)
- green peas — 0.5 cup (chopped)
- soybeans — 1 cup (whole)
- onion — 1 piece (chopped)
- Garlic — 4 piece (chopped)
- Ginger — 2 piece (chopped)
- coriander powder — 1 tsp (ground)
- chana masala powder — 1 tsp (ground)
- Turmeric Powder — 0.5 tsp (ground)
- Tomato — 1 piece (chopped)
- salt (optional) (whole)
- green chillies — 2 piece (chopped)
Method
- To begin making the Spicy Soya Bhurji Recipe, soak the dried soya chunks in hot water for 5 minutes, so it becomes soft.
- Squeeze and blend into a semi chunky pieces using a mixer grinder.
- Keep it aside.Heat oil in a heavy bottomed pan, add the onions, ginger and garlic and saute until the onions turn golden in colour.Add in the tomatoes, green chillies and cook until the tomatoes soften.
- Add the coriander powder, chana masala powder, red chilli powder, garam masala and turmeric powder and saute for a minute. Add the ground soya and green peas along with about half a cup of water, mix well and cook covered for 8 to 10 minutes until the soya absorbs the masala and the mixture turns semi-dry. Check the salt and spices and adjust accordingly, then garnish with coriander leaves. Serve the Spicy Soya Bhurji along with Tawa Paratha and a salad for a wholesome lunch or dinner.
