
Shukto
Bitter mixed vegetable curry with bitter gourd, raw banana, and drumstick in milk-mustard gravy. First course of Bengali thali.

Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Drumstick — 100 g (chopped)
- Ginger — 1 tsp (ground)
- salt (optional) (whole)
- Turmeric Powder — 0.5 tsp (ground)
- banana — 100 g (chopped)
- Milk — 100 g (whole)
- karela — 100 g (chopped)
- onion — 2 piece (chopped)
- Garlic — 1 tsp (ground)
- Red Chilli Powder (Lal Mirch) — 1 tsp (ground)
- Tomato — 2 piece (chopped)
Tempering
- Mustard Oil — 2 tbsp (whole)
- Cumin Seeds — 1 tsp (whole)
Method
- Heat the Mustard Oil in a kadhai until it smokes, then lower the flame.
- Fry the sliced Bitter Gourd 4-5 minutes until the edges crisp, then lift it out.
- Crackle the Cumin Seeds in the same oil for 30 seconds.
- Add the Drumstick and banana pieces and fry 4 minutes until they take a little colour.
- Add the chopped onion with the Ginger and Garlic and cook 4 minutes until softened.
- Add the chopped Tomato with Turmeric Powder, Red Chilli Powder and salt and cook 5 minutes.
- Pour in 250 ml hot water, cover and simmer 8 minutes until every vegetable is tender.
- Return the Bitter Gourd, pour in the Milk and warm 3 minutes on the lowest flame without boiling; garnish with Coriander Leaves and serve.
