- Toor Dal — 250 g (whole)
- salt (optional) (whole)
- sooji — 100 g (ground)
- Wheat Flour (Atta) — 250 g (ground)
- Cow Ghee — 80 g (melted)
- Moong Dal — 100 g (whole)
Tempering
Method
- For the baati: combine wheat flour and semolina with salt. Knead into a stiff, firm dough using water (a little oil/ghee if available). Divide and shape into round balls with a small dent in the centre.
- Bake the baatis in a traditional cow-dung/wood fire or oven until hard and golden-brown on the outside and cooked through, turning for even colour.
- For the dal: wash toor dal and moong dal, then pressure-cook or boil with salt and water until soft.
- Heat oil, add the tempering, and pour over the cooked dal. Simmer briefly.
- Lightly crush the hot baatis, serve with the dal poured over, garnished with coriander leaves.
