Method

  1. Knead a stiff dough with wheat flour, semolina, 2 tbsp ghee, ajwain, a pinch of turmeric, baking soda and salt. Rest 15 minutes, then shape into round balls (bafla).
  2. Boil the bafla balls in salted water until they float and firm up, about 12-15 minutes. Drain.
  3. Bake or roast the boiled bafla in a hot oven or over coals until golden and crisp on the outside.
  4. For the dal: pressure-cook toor dal with turmeric and salt until soft. Temper cumin and dried red chilli in ghee, add to the dal and simmer.
  5. Crack the hot bafla, soak generously in melted ghee, and serve with the hot dal. Garnish with coriander leaves.
