
Indori Dal Bafla
Boiled-then-baked wheat balls served with dal and ghee. MP signature dish — harder exterior, soft interior, soaked in ghee.

- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)

- Wheat Flour (Atta) — 250 g (ground)
- Ghee — 100 g (whole)
- Toor Dal — 250 g (whole)
- sooji — 50 g (ground)
Tempering
Method
- Knead a stiff dough with wheat flour, semolina, 2 tbsp ghee, ajwain, a pinch of turmeric, baking soda and salt. Rest 15 minutes, then shape into round balls (bafla).
- Boil the bafla balls in salted water until they float and firm up, about 12-15 minutes. Drain.
- Bake or roast the boiled bafla in a hot oven or over coals until golden and crisp on the outside.
- For the dal: pressure-cook toor dal with turmeric and salt until soft. Temper cumin and dried red chilli in ghee, add to the dal and simmer.
- Crack the hot bafla, soak generously in melted ghee, and serve with the hot dal. Garnish with coriander leaves.
