
Malwa Daal Baati
Baked wheat balls served with panchmel dal. Malwa version with more ghee than Rajasthani — different spice mix.

Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Wheat Flour (Atta) — 250 g (ground)
- salt (optional) (whole)
- Toor Dal — 100 g (whole)
- Ghee — 100 g (whole)
Tempering
Method
- Pressure-cook the toor dal with turmeric and salt until soft. Mash lightly and keep ready for tempering.
- For the baati, mix whole wheat flour with a little ghee (moyan), ajwain and salt. Add water gradually and knead a firm, tight dough. Rest 15 minutes.
- Divide the dough and shape into round balls (baati), pressing a small dent in the centre.
- Bake/roast the baatis in an oven, tandoor or on coals until golden and cooked through (for bafla, first boil the balls in water, then bake). Dip the hot baatis in melted ghee.
- Temper the cooked dal with ghee, cumin and red chilli. Serve the ghee-soaked baatis hot with the dal, garnished with fresh coriander.
