Sabudana Khichdi Vrat

Maharashtrian fasting (vrat) dish of soft sago pearls tossed with boiled potato, crushed roasted peanuts, cumin and green chilli, finished with lemon. Light, mildly spiced and gluten-free. About 280 calories per serving.

Method

  1. Rinse sabudana well 2-3 times until water runs clear, then soak in just enough water for 3-4 hours until soft and fluffy. Drain.
  2. Dry roast peanuts, cool and coarsely crush. Boil and dice the potatoes.
  3. Mix the crushed peanuts into the drained sabudana along with rock salt. Keep aside.
  4. Heat oil in a pan. Add cumin seeds and let them splutter, then add slit green chillies.
  5. Add the boiled potato cubes and saute for a minute.
  6. Add the sabudana-peanut mixture. Mix gently and cook on low flame for 3-4 minutes, stirring, until the pearls turn translucent.
  7. Squeeze lemon juice, garnish with fresh coriander and serve hot.
