Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Potato — 250 g (chopped)
- salt (optional) (whole)
- Turmeric Powder — 0.5 tsp (ground)
- coriander powder — 1 tsp (ground)
- Red Chilli Powder (Lal Mirch) — 1 tsp (ground)
- Spinach (Palak) — 250 g (chopped)
Tempering
- Cumin Seeds — 1 tsp (whole)
- oil — 2 tbsp (whole)
Method
- Wash the spinach leaves thoroughly and chop them roughly. Peel and dice the potatoes into small cubes.
- Heat the oil in a kadai and add the cumin seeds, letting them sizzle.
- Add the diced potatoes and saute on medium heat for 4 to 5 minutes till they start to turn golden at the edges.
- Add turmeric powder, red chilli powder, coriander powder and salt, and mix well to coat the potatoes.
- Add the chopped spinach, mix and cover. Cook on low to medium heat, stirring occasionally, till the spinach wilts down completely and the potatoes turn fully tender.
- Mash the spinach a little with the back of the spoon for a rustic saag texture, and cook uncovered for a few more minutes till most of the moisture dries up, leaving a semi dry consistency.
- Garnish with chopped coriander leaves and serve hot with roti.
