
Rava Appam
Rava appam is an instant semolina appam made from a quick batter of rava, water and a little sugar aerated with fruit salt, then cooked into soft, fluffy small rounds in an appam pan. Served with chutney.

Ingredients
- sooji — 170 g (ground)
- Water — 2 cup (whole)
- sugar — 2 tsp (whole)
- Fruit Salt (Eno Style - Effervescent) — 1 piece (whole)
Method
- In a bowl add the semolina and sugar
- Pour in the water and whisk into a smooth, lump-free flowing batter
- Rest the batter for a few minutes so the semolina absorbs the water
- Just before cooking, add the fruit salt and mix gently until the batter turns frothy
- Immediately pour a ladle of batter onto a hot greased appam pan
- Cover and cook on medium flame until the top is set and the base turns light golden
- Serve the rava appam hot
