
Appam with Stew
Lacy fermented rice hoppers with vegetable coconut milk stew. Kerala Sunday breakfast tradition.

Ingredients
Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- coconut milk — 100 g (whole)
- salt (optional) (whole)
- Coconut — 100 g (chopped)
- rice — 100 g (ground)
Tempering
- Coconut Oil — 2 tbsp (whole)
Method
- Soak raw rice for 4-5 hours. Drain and grind with grated coconut and coconut milk to a smooth, thin batter.
- Add salt and rest the batter to ferment for 6-8 hours (overnight), until it rises and turns slightly bubbly.
- Heat a greased appachatti (curved appam pan) on medium flame. Ladle in a portion of batter and swirl quickly to coat the sides thinly, leaving the center thicker.
- Cover and cook for 2-3 minutes until the center is set and the edges turn lacy and golden.
- Remove and repeat with the remaining batter. Garnish with coriander leaves and serve hot with vegetable coconut milk stew.
