Method

  1. Soak raw rice for 4-5 hours. Drain and grind with grated coconut and coconut milk to a smooth, thin batter.
  2. Add salt and rest the batter to ferment for 6-8 hours (overnight), until it rises and turns slightly bubbly.
  3. Heat a greased appachatti (curved appam pan) on medium flame. Ladle in a portion of batter and swirl quickly to coat the sides thinly, leaving the center thicker.
  4. Cover and cook for 2-3 minutes until the center is set and the edges turn lacy and golden.
  5. Remove and repeat with the remaining batter. Garnish with coriander leaves and serve hot with vegetable coconut milk stew.
