  1. Soak raw rice for 4-5 hours. Drain and grind with grated coconut and coconut milk to a smooth, thin batter.
  2. Add salt and rest the batter to ferment for 6-8 hours (overnight), until it rises and turns slightly bubbly.
  3. Heat a greased appachatti (curved appam pan) on medium flame. Ladle in a portion of batter and swirl quickly to coat the sides thinly, leaving the center thicker.
  4. Cover and cook for 2-3 minutes until the center is set and the edges turn lacy and golden.
  5. Remove and repeat with the remaining batter. Serve hot with vegetable stew or a bowl of sweetened coconut milk.
