  1. Soak the kidney beans (rajma) in water for 6-8 hours or overnight; drain before cooking.
  2. Peel the turnips (gogji) and cut into thick chunks; keep aside.
  3. Heat oil in a kadhai; add cumin seeds and let them sizzle, then add asafoetida (hing).
  4. Add grated ginger and chopped tomato; cook until the tomato softens and releases oil.
  5. Add turmeric, red chilli powder and coriander powder; stir for a minute so the spices do not burn.
  6. Add the soaked kidney beans, turnip chunks and enough water to cover; pressure cook or simmer covered until both the rajma and turnip are completely tender (about 40-45 minutes).
  7. Mash a few beans lightly against the side of the pan to thicken the gravy; adjust salt.
  8. Garnish with coriander leaves and serve hot with steamed rice.
