
Rajma Curry
Red kidney bean curry in onion-tomato gravy. MP weekend lunch with steamed rice.

Ingredients
Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- coriander powder — 1 tsp (ground)
- Red Chilli Powder (Lal Mirch) — 1 tsp (ground)
- salt (optional) (whole)
- onion — 100 g (chopped)
- Garlic — 1 tsp (ground)
- Ginger — 1 tsp (ground)
- kidney beans — 250 g (whole)
- Tomato — 100 g (chopped)
- Turmeric Powder — 0.5 tsp (ground)
Tempering
- oil — 2 tbsp (whole)
- Cumin Seeds — 1 tsp (whole)
Method
- Soak the kidney beans for 6-8 hours or overnight, then pressure cook with a pinch of salt until soft.
- Heat oil in a kadhai; add cumin seeds and let them splutter.
- Add chopped onion and saute until golden brown.
- Add ginger-garlic paste and saute for a minute until the raw smell disappears.
- Add chopped tomato and cook until it softens and the oil separates from the masala.
- Add turmeric, red chilli powder and coriander powder; mix well and cook for a minute.
- Add the boiled kidney beans along with a little of their cooking liquid; simmer for 10-15 minutes until the gravy thickens.
- Mash a few beans to thicken further, adjust salt, garnish with coriander leaves and serve hot with steamed rice.
