
Rajasthani Kheer

- Cardamom — 2 piece (ground)

- Saffron — 100 g (ground)
- rice — 100 g (ground)
- sugar — 0.5 cup (whole)
Tempering
Method
- Wash the rice well and soak it in water for 20 minutes, then drain.
- Soak a few strands of saffron in a tablespoon of warm milk or water and keep aside.
- Heat the oil in a heavy-bottomed pan and add the soaked, drained rice. Saute gently for 2 minutes.
- Add enough water to cook the rice halfway and simmer on low heat until the rice softens, stirring occasionally so it does not stick.
- Add the sugar and a pinch of salt, and mix well, letting it dissolve completely.
- Simmer on low heat, stirring frequently, until the kheer thickens to a rich, creamy consistency, about 20 to 25 minutes.
- Add the soaked saffron and mix well to bring in the colour and aroma.
- Garnish with crushed cardamom and serve warm or chilled.
