
Poha Cutlet
Crispy patties made from leftover poha with potato and peanuts. MP zero-waste breakfast innovation.

Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)

- Gram Flour — 1 cup (ground)
- salt (optional) (whole)
- Potato — 100 g (chopped)
- Flattened Rice — 250 g (ground)
Tempering
Method
- Rinse the flattened rice (poha) briefly under water to soften it, then drain well and let it sit for 5 minutes so it becomes soft but not mushy.
- Boil the potato until soft, then peel and mash it well.
- In a large bowl, combine the soaked poha, mashed potato and gram flour. Add salt to taste and mix everything into a firm, bindable mixture, adding a splash of water only if needed.
- Mix in the chopped coriander leaves and combine well.
- Divide the mixture into equal portions and shape each into a flat round or oval cutlet.
- Heat the oil in a shallow pan or tawa on medium flame. Place the cutlets carefully and shallow fry until the bottom turns golden and crisp.
- Flip gently and shallow fry the other side too until both sides are golden brown and crisp, drizzling a little more oil around the edges if needed.
- Drain the cutlets on a paper towel to remove excess oil.
- Serve the hot Poha Cutlets garnished with coriander leaves, along with green chutney or tomato ketchup.
