
Patiala Barfi

Ingredients
Garnish
- Cardamom — 2 piece (ground)
- pistachios (optional) (garnish) — 15 g (whole)

- Milk — 100 g (whole)
- sugar — 0.5 cup (whole)
- Khoya (Dhap - Soft/Moist) — 150 g
- Ghee — 40 g
Tempering
Method
- Cook the milk and khoya together in a heavy pan on medium-low flame, stirring frequently, until the mixture thickens and reduces.
- Add ghee and sugar; continue cooking on low flame, stirring continuously, until the mixture turns thick and glossy and starts leaving the sides of the pan.
- Stir in cardamom powder and mix well.
- Pour the hot mixture onto a lightly oiled or ghee-greased tray and spread it evenly to about half-inch thickness.
- Garnish the top with slivered pistachios; let it cool and set for 2-3 hours.
- Once fully set, cut into square or diamond-shaped pieces.
