
Papad Wedding
Roasted moong dal papad served as crispy accompaniment in wedding feast thali. Seasoned with red chilli and black salt.

- Black Salt — 4 g (ground)

- Moong Dal — 150 g (whole)
- Red Chilli Powder (Lal Mirch) — 1 tsp (ground)
- Asafoetida — 1 pinch (ground)
Tempering
Method
- Soak moong dal, grind to a smooth thick paste, or knead moong dal flour with a little water into a stiff dough.
- Add red chilli powder, black salt (kala namak) and a pinch of asafoetida to the dough and knead again until firm and well combined.
- Grease your palms with a little oil, divide the dough into small balls, and flatten each into a thin, even, round disc.
- Sun-dry the discs on a clean cloth for several hours until completely dried and crisp.
- To serve, roast the dried papad over an open flame with tongs until golden and puffed, or deep-fry briefly in hot oil. Serve as a crisp accompaniment in the wedding thali.
