  1. Grate the fresh coconut and keep it ready along with the coconut cream.
  2. Heat the coconut oil in a heavy bottomed pan on low flame.
  3. Add the grated coconut and roast gently for 2 to 3 minutes until it turns light golden and fragrant.
  4. Add 2 cups of water and let it simmer on low flame for 8 to 10 minutes so the coconut softens.
  5. Add the jaggery and sugar, stirring continuously until they dissolve completely into the coconut milk base.
  6. Pour in the fresh coconut cream and a pinch of salt, and simmer on low flame for 10 minutes, stirring often so it does not curdle or stick to the bottom.
  7. Once the payasam thickens to a rich pouring consistency, switch off the flame.
  8. Crush the cardamom and sprinkle it over the payasam, mixing gently.
  9. Serve the Onam Pookalam Payasam warm or chilled as part of the festival sadya.
