
Onam Pookalam Payasam

Ingredients
Garnish
- Cardamom — 2 piece (ground)
Main
- Fresh Coconut Cream (Coastal Grade) — 100 g (whole)
- Coconut — 100 g (chopped)
- sugar — 0.5 cup (whole)
- salt (optional) (whole)
- Jaggery — 100 g (whole)
Tempering
- Coconut Oil — 2 tbsp (whole)
Method
- Grate the fresh coconut and keep it ready along with the coconut cream.
- Heat the coconut oil in a heavy bottomed pan on low flame.
- Add the grated coconut and roast gently for 2 to 3 minutes until it turns light golden and fragrant.
- Add 2 cups of water and let it simmer on low flame for 8 to 10 minutes so the coconut softens.
- Add the jaggery and sugar, stirring continuously until they dissolve completely into the coconut milk base.
- Pour in the fresh coconut cream and a pinch of salt, and simmer on low flame for 10 minutes, stirring often so it does not curdle or stick to the bottom.
- Once the payasam thickens to a rich pouring consistency, switch off the flame.
- Crush the cardamom and sprinkle it over the payasam, mixing gently.
- Serve the Onam Pookalam Payasam warm or chilled as part of the festival sadya.
