
North Karnataka Egg Curry

Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Ginger — 1 tsp (ground)

- Tomato — 100 g (chopped)
- Turmeric Powder — 0.5 tsp (ground)
- coriander powder — 1 tsp (ground)
- Coconut — 100 g (chopped)
- onion — 100 g (chopped)
- boiled eggs — 250 g (whole)
- Red Chilli Powder (Lal Mirch) — 1 tsp (ground)
- Garlic — 1 tsp (ground)
Tempering
- Curry Leaves — 8 piece (ground)
- Urad Dal — 1 tsp (whole)
- Mustard Seeds (Black) — 1 tsp (whole)
- Coconut Oil — 2 tbsp (whole)
Method
- Peel the boiled eggs and make a few shallow slits on each so they soak up the masala well, then keep aside.
- Grate the coconut and grind it to a smooth paste along with the chopped tomato, ginger and garlic.
- Heat the coconut oil in a kadai, add the mustard seeds and urad dal, and let them splutter and turn golden.
- Add the curry leaves and chopped onion, and saute until the onion turns soft and light brown.
- Add the turmeric powder, red chilli powder and coriander powder, and fry for a few seconds until the raw smell of the spices goes away.
- Pour in the ground coconut-tomato paste along with a little water, add salt, and simmer on medium-low flame until the oil begins to separate from the masala.
- Slide in the boiled eggs and simmer gently for a few minutes so the eggs absorb the flavour of the curry.
- Garnish with chopped coriander leaves and serve the North Karnataka style egg curry hot with rice or roti.
