  1. Peel the boiled eggs and make a few shallow slits on each so they soak up the masala well, then keep aside.
  2. Grate the coconut and grind it to a smooth paste along with the chopped tomato, ginger and garlic.
  3. Heat the coconut oil in a kadai, add the mustard seeds and urad dal, and let them splutter and turn golden.
  4. Add the curry leaves and chopped onion, and saute until the onion turns soft and light brown.
  5. Add the turmeric powder, red chilli powder and coriander powder, and fry for a few seconds until the raw smell of the spices goes away.
  6. Pour in the ground coconut-tomato paste along with a little water, add salt, and simmer on medium-low flame until the oil begins to separate from the masala.
  7. Slide in the boiled eggs and simmer gently for a few minutes so the eggs absorb the flavour of the curry.
  8. Garnish with chopped coriander leaves and serve the North Karnataka style egg curry hot with rice or roti.
