
Mudaliar Style Omelette Curry
Tamil Nadu Mudaliar-style egg curry where a thin omelette is cut into strips and simmered in a rich gravy of onion, tomato, ground coconut and poppy seeds, yogurt and whole spices. Best served hot with parotta or rice. About 250 calories per serving.

- Poppy Seeds (Gasagase) — 1 tbsp (whole)
- Coriander Seeds — 1 tbsp (whole)
- Sunflower Oil — 2 tbsp (whole)
- Ginger — 1 piece (chopped)
- Tomato — 1 piece (chopped)

- Black Peppercorns (Tellicherry Bold Grade) — 2 tbsp (whole)
- Turmeric Powder — 1 tbsp (ground)
- Fresh Coconut — 2 tbsp (grated)
- hung curd — 0.5 cup (whole)
- salt (optional) (whole)
- Garlic — 4 piece (chopped)
- cinnamon stick — 1 piece (ground)
- Cloves — 3 piece (ground)
- Mint Leaves — 2 piece (ground)
- Eggs — 2 piece (whole)
- green chillies — 2 piece (chopped)
- Coriander Leaves — 5 piece (ground)
- Cardamom — 1 piece (ground)
Tempering
- Curry Leaves — 2 piece (ground)
Method
- We begin making the Mudaliar Style Omelette Curry Recipe by breaking the eggs and whisking it with onions, coriander leaves, green chillies and salt.Heat an omellete pan with oil and pour the egg mixture when it is hot, flip it over and cook on the other side as well.
- Fold the omelette and cut them into strips.Now grind the ingredients for onion paste into a smooth paste and keep it aside.Next grind the coconut and poppy seeds into a smooth paste and keep it aside as well.
- Now slowly add in your onion paste mixture and fry them till the raw smell of the masala goes away.Once done add in the coconut mixture and fry again for about 20 minutes.Next you can add in the yogurt whipped with turmeric powder and salt and slow add and mix well.
- You can add some water at this stage and leave it to boil.
- Boil for another 20 minutes.Pour the curry over the omelette and garnish with few coriander leaves.
