  1. Clean and cut the country chicken into medium pieces. Wash well and set aside.
  2. Heat coconut oil in a heavy-bottomed pan. Splutter mustard seeds and urad dal, then add curry leaves.
  3. Add chopped onions and saute until golden brown.
  4. Add ginger and garlic and saute for a minute until the raw smell goes.
  5. Add chopped tomatoes and cook until soft and mushy.
  6. Add turmeric, red chilli powder and coriander powder. Saute until the oil separates.
  7. Add the chicken pieces and saute on high flame to coat well with the masala.
  8. Add salt and enough water to make a thin saaru. Cover and cook on medium flame until the chicken is tender.
  9. Adjust salt and consistency. Garnish with coriander leaves and serve hot with rice, ragi mudde or roti.
