
Marwari Sangri Ki Sabzi

Ingredients
Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- amchur powder — 1 tsp (ground)
- Curd — 100 g (whole)
- Sangri (Dried Desert Beans) — 100 g
- salt (optional) (whole)
Tempering
- Cumin Seeds — 1 tsp (whole)
- oil — 2 tbsp (whole)
Method
- Soak the dried sangri beans in water overnight or for at least 6 to 8 hours, then drain and rinse well.
- Pressure cook or boil the soaked sangri in fresh water with a little salt until soft, then drain and keep aside.
- Heat the oil in a kadai on medium flame and add the cumin seeds, letting them sizzle.
- Add the boiled sangri to the tempering and saute for 2 to 3 minutes so it soaks up the flavour of the cumin and oil.
- Whisk the curd and add it to the pan on low flame, stirring continuously to prevent it from splitting.
- Add the amchur powder and salt, then cook on low flame for 8 to 10 minutes, stirring occasionally, until the mixture thickens and turns dry with the curd well absorbed into the sangri.
- Garnish with fresh coriander leaves.
- Serve the Marwari Sangri Ki Sabzi hot with rotis or bajra roti.
