  1. Pick and wash the fenugreek (methi) leaves thoroughly, then chop them finely.
  2. Heat the oil in a kadai on medium flame for the tempering.
  3. Add the chopped methi leaves to the hot oil and saute for 2 to 3 minutes until they wilt and shrink slightly.
  4. Sprinkle the gram flour (besan) evenly over the methi and mix well so it coats the leaves without forming lumps.
  5. Add salt and a splash of water if the mixture looks too dry, then cover and cook on low flame for 6 to 8 minutes, stirring occasionally, until the besan is cooked through and the raw smell disappears.
  6. Keep stirring gently so the besan roasts evenly and turns light golden, giving the sabzi a dry, crumbly texture.
  7. Garnish with fresh coriander leaves before taking off the flame.
  8. Serve the Marwari Methi Ki Sabzi hot with rotis.
