
Marwari Methi Ki Sabzi

- methi leaves — 250 g (chopped)
- Gram Flour — 100 g (ground)

Tempering
Method
- Pick and wash the fenugreek (methi) leaves thoroughly, then chop them finely.
- Heat the oil in a kadai on medium flame for the tempering.
- Add the chopped methi leaves to the hot oil and saute for 2 to 3 minutes until they wilt and shrink slightly.
- Sprinkle the gram flour (besan) evenly over the methi and mix well so it coats the leaves without forming lumps.
- Add salt and a splash of water if the mixture looks too dry, then cover and cook on low flame for 6 to 8 minutes, stirring occasionally, until the besan is cooked through and the raw smell disappears.
- Keep stirring gently so the besan roasts evenly and turns light golden, giving the sabzi a dry, crumbly texture.
- Garnish with fresh coriander leaves before taking off the flame.
- Serve the Marwari Methi Ki Sabzi hot with rotis.
