
Makhana Kheer Bihar
Traditional Mithila-style sweet kheer from Bihar. Phool makhana (popped lotus seeds) are roasted in a little ghee, then simmered in milk with sugar and cardamom until creamy. About 375 calories per serving.

- Milk — 500 ml (whole)
- Phool Makhana (Popped Lotus Seeds) — 25 g (roasted)
- sugar — 0.25 cup (whole)
- Ghee — 9 g (whole)
- salt (optional) (whole)
Method
- Heat the ghee in a heavy-bottomed pan on low flame and roast the phool makhana for 3 to 4 minutes until crisp and fragrant. Remove and coarsely crush half of them.
- In the same pan, pour the milk and bring it to a boil on medium flame, stirring occasionally.
- Add a pinch of salt and simmer the milk on low flame for 8 to 10 minutes until it reduces slightly.
- Add the roasted makhana, both whole and crushed, to the milk and cook for another 5 to 6 minutes until soft.
- Add the sugar and stir well until fully dissolved, then simmer for 2 more minutes to bring the kheer to a good, thick consistency.
- Crush the cardamom and mix it into the kheer, then switch off the flame.
- Serve the Bihar-style makhana kheer warm, garnished with the crushed cardamom.
