Method

  1. Heat the ghee in a heavy-bottomed pan on low flame and roast the phool makhana for 3 to 4 minutes until crisp and fragrant. Remove and coarsely crush half of them.
  2. In the same pan, pour the milk and bring it to a boil on medium flame, stirring occasionally.
  3. Add a pinch of salt and simmer the milk on low flame for 8 to 10 minutes until it reduces slightly.
  4. Add the roasted makhana, both whole and crushed, to the milk and cook for another 5 to 6 minutes until soft.
  5. Add the sugar and stir well until fully dissolved, then simmer for 2 more minutes to bring the kheer to a good, thick consistency.
  6. Crush the cardamom and mix it into the kheer, then switch off the flame.
  7. Serve the Bihar-style makhana kheer warm, garnished with the crushed cardamom.
