
Luchi Alur Dom
Deep-fried puffed bread with baby potato curry. Agartala Sunday brunch staple from Bengali community.

Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)

- Potato — 100 g (chopped)
- Wheat Flour (Atta) — 250 g (ground)
Tempering
Method
- Heat the oil in a kadhai to 180 C for frying, taking out a spoonful for the dough and the potato.
- Rub a teaspoon of the oil into the Wheat Flour with salt, knead with about 120 ml water into a stiff dough and rest it 15 minutes.
- Boil the Potato until just tender, peel it and cut it into 2 cm cubes.
- Fry the Potato cubes in the reserved oil 6-7 minutes with salt until the edges crisp, then add 100 ml water and simmer 6 minutes into a thick dum.
- Roll the dough into 12 small discs, using oil to stop them sticking.
- Slide each disc into the hot oil, press with a slotted spoon until it puffs, and fry 20-25 seconds a side, keeping them pale.
- Garnish the alur dom with Coriander Leaves and serve it with the hot luchis.
