Kojagiri Masala Milk

Kojagiri Purnima special spiced milk from Maharashtra: full-fat milk slow-simmered and reduced, sweetened, and enriched with ground almonds, cashews and pistachios, perfumed with saffron and cardamom. Traditionally savoured under the full-moon night.

Method

  1. Soak a pinch of saffron in 1 tablespoon of warm milk. Blanch and finely grind the almonds, cashews and most of the pistachios (reserve a few slivers for garnish).
  2. Bring the milk to a boil in a heavy pan, then simmer on low, stirring often, until it thickens and reduces slightly.
  3. Stir in the sugar, ground nuts, cardamom powder and the saffron milk. Simmer for a few more minutes until the sugar dissolves and the flavours infuse.
  4. Serve the masala milk warm or chilled, garnished with the reserved pistachio slivers and a few saffron strands.
