
Kojagiri Masala Milk
Kojagiri Purnima special spiced milk from Maharashtra: full-fat milk slow-simmered and reduced, sweetened, and enriched with ground almonds, cashews and pistachios, perfumed with saffron and cardamom. Traditionally savoured under the full-moon night.

- pistachios — 15 g (ground)

- Water — 0.5 cup (whole)
- Cashew Nuts — 15 g (ground)
- Cardamom — 2 g (ground)
- badam — 20 g (ground)
- sugar — 60 g (whole)
- Milk — 600 g (whole)
- Saffron — 0.2 g (ground)
Method
- Soak a pinch of saffron in 1 tablespoon of warm milk. Blanch and finely grind the almonds, cashews and most of the pistachios (reserve a few slivers for garnish).
- Bring the milk to a boil in a heavy pan, then simmer on low, stirring often, until it thickens and reduces slightly.
- Stir in the sugar, ground nuts, cardamom powder and the saffron milk. Simmer for a few more minutes until the sugar dissolves and the flavours infuse.
- Serve the masala milk warm or chilled, garnished with the reserved pistachio slivers and a few saffron strands.
