
Kodo Ki Kheer

- Cardamom — 2 piece (ground)

- Milk — 100 g (whole)

- Jaggery — 100 g (whole)
- sugar — 0.5 cup (whole)
Tempering
Method
- Soak the kodo millet in water for about 30 minutes, then drain well.
- Heat the oil in a heavy-bottomed pan on low flame.
- Add the soaked kodo millet and roast lightly for a minute to bring out its aroma.
- Pour in the milk and bring it to a gentle boil, stirring frequently so it does not stick to the bottom.
- Lower the flame and let it simmer for 15 to 20 minutes, stirring often, until the millet turns soft and the mixture thickens.
- Add the sugar and jaggery, and a pinch of salt, stirring well until both dissolve completely into the kheer.
- Continue simmering for another 5 minutes on low flame until the kheer reaches a smooth, pouring consistency.
- Crush the cardamom lightly and stir it in, then switch off the flame.
- Serve the kodo ki kheer warm or chilled, garnished with the cardamom aroma.
