- Saffron — 0.5 g (ground)
- sugar — 0.5 cup (whole)
- Chenna — 250 g (whole)
- Milk — 500 g (whole)
- salt (optional) (whole)
Method
- Knead the fresh chhena with a teaspoon of the sugar until smooth and lump-free, then shape into small smooth balls.
- Make a light sugar syrup with most of the sugar and water; gently simmer the chhena balls in it until they swell and firm up, then lift out.
- Boil the milk with the remaining sugar, crushed cardamom and saffron, and reduce slightly to a fragrant, thickened milk.
- Soak the cooked chhena balls in the warm saffron-cardamom milk for a few hours so they absorb the flavour.
- Serve warm or at room temperature, with the soaking milk.
